YEAR: 2022, hot and dry
NOTES: Cyril Gautheron is a modern producer making old-school classical Chablis with a brisk energy and delicate minerality. This Grand Cru is rich and extracted with a touch of barrel, but retains the region’s signature chiseled, stony salinity beneath the lush fruit. A wine worthy of big glasses and a moment of pause.

2. Ravaut Ladoix 1er “Basses Mourottes” 20
GRAPE: 100% Chardonnay
TYPE: White Burgundy from premier cru vines near the Grand Cru Corton-Charlemagne
YEAR: 2020, warm and dry
NOTES: Vincent Ravaut’s humble family domaine makes quietly terrific wines; this premier cru is from the town of Ladoix, at the base of the Hill of Corton. Look for a beautifully expressive nose with notes of gardenia, buttered toast, and roasted pears.

3. Salomon-Undhof Riesling “Pfaffenberg” 2021
GRAPE: 100% Riesling
TYPE: dry Austrian Riesling from very old vines
YEAR: 2021, cool spring, warm summer, dry autumn; perfect
NOTES: From a steep vineyard directly on the Danube river, this is extraordinarily complex wine – worthy of conversation with some of the finer white Burgundies we import. The nose opens smoky and dry, with lemon peel and herbs. The mouthfeel is rich, broad and palate coating on the attack but quickly distills into a lean, lithe, piercing mineral finish.
