Winemaker Gilbert Hammel retired after the 2019 vintage and has been replaced by Philippe Cheron, a well-established winemaker in the Côte de Nuits whose family owned the Varoilles vineyards years ago. Cheron has combined his properties under a new name, the Domaine du Couvent. It is unquestionably a wine of Grand Cru density and intensity, if in a charming, elegant way rather than bold and muscular. Dark fruit and oak come through the nose along with an earthy minerality. Neal Martin praised its “lovely, very well defined bouquet of dark cherries, sous-bois and dark chocolate scents.”

Cheron also has almost an acre in Mazoyères,” a climat in Charmes-Chambertin. (The wine may be labeled either “Mazoyères Grand Cru” or “Charmes-Chambertin Grand Cru” at the producer’s election. Jasper Morris described it as having “immediate weight à la Charmes, but with a density and minerality which is more Mazoyeres”). Morris found “an enormous volume of fine dark fruit here,” praising its “excellent concentration” and its “long and sensual finish.” We found it beautiful, with dark briary blackberry fruit mixing with gingerbread and warm earth. We think Morris’s 95-97 rating is well deserved. If you have the budget and patience, this will be magnificent.

Vincent Boyer and his sister Sophie are the winemakers at this gem of an estate in Meursault. They farm a mouthwatering collection of vines in and around Meursault and Puligny-Montrachet, including all three famous Meursault premier crus. They farm organically, and use a long elevage in barrels then concrete eggs to give their wines a regal depth and complexity. These are some of our favorite white Burgundies from anywhere. Puligny-Montrachet 1er cru “Cailleret” is a tiny five-owner premier cru just stone’s throw from the Grand Cru Chevalier Montrachet. The nose is extremely Puligny, intensely concentrated and very fine. The mouth shows superb tension over a core of dry stone fruit and faint spice. Burghound found “voluminous, sappy and intensely mineral-driven middleweight flavors,” calling it an “extremely classy and elegant wine.”
